...nice atmosphere. I went in because I REALLY wanted pulled pork and their name popped up as a well liked place when googled. I told them that when I walked through the door. I thought Id be ordering to go, because I wasnt sure what type of establishment it was, but sat down and even ordered a cocktail. They seemed like friendly people and I liked the atmosphere. Sadly, it took so long to place my food order that I never actually did... at least 30 minutes, probably more. We paid for our whiskey sours and left to find pulled pork elsewhere. Im a Carolina girl and we KNOW how to do pulled pork. Thats all I wanted. ...was craving it for a couple weeks.

The bartender/server was friendly and helpful, but was definitely overworked and stretched thin. There was a lady sitting at the bar eating, drinking wine, and vaping, however when our order came up from the kitchen she brought it to us which was a little off putting. If that lady was a manager then I can fully understand the service level opportunities and food issues. The brisket which was $23 for a two meat plate was just one slice and half of that was fat. The smoking was not that good and the food was almost to the point of being cold. I made the mistake of not looking closely at the dates of the previous reviews where the latest ones really show how this place which I had high hopes for has really gone down hill. Definitely will not be back.

Love this old town round rock area. Food was decent. Id say my favorites were the homemade Pickles, Mac n cheese, and the potato salad. Burgers are good. BBQ was decent but there are others for the same price or less who are much better. But overall a good pick. Parking: There is some street parking or garage around the corner.

Super nice staff and manager! No complaints there. Vibe was cute. We went for the food though. Food was dry and had literally no seasoning, but I didnt want to say anything there because then it would have been moistened with spit for sending it back (totally kidding, but I used to work in a restaurant so I know send backs are annoying). I went through a few diet cokes to choke the brisket down and had to smother it with salt to taste anything. I barely ate any of it and didnt get a to-go box. Super disappointed. I had a bite of my friends burger and it seems thats where all the seasoning went haha :) Still didnt save the day for the rest of the food though. I wont be back.

Worst customer service I have experienced in my life. I rarely write reviews. In this case, I had to. Called in multiple times this week trying to place an order for a family in need to give as a gift. My request was simple: order and pay today for pick up tomorrow. I have attempted to email with catering all week, have called in 3 times, and each experience has landed with them not wanting to find a way to accommodate. Justin told me multiple times to come in when I repeatedly explained that I am not in town and will be unavailable tomorrow to order. The cherry on top was Justin hanging up on me. I have been a loyal customer almost every week and have even referred people here. This is not the way you treat customers. I like their food, but the experience was so bad that I will happily tell others to be wary of this place in future.

Great BBQ with friendly and welcoming staff! I just wandered in off the street after scheduling a Medicare 101 event at the Round Rock Library - I needed lunch and asked a local passerby if they knew of a good BBQ place within walking distance. They pointed me in the direction of Liberty BBQ. I am following a Carnivore diet right now, so I was worried they might not have anything Id be able to eat (some local BBQ places put their sauce on while smoking/cooking). One of the owners was there, and he helped me find things I could eat that did not have extra sugar and carbs. I told him whatever he picked would be great now that he knew my dietary limitations. Garrett gave me some of the best turkey Ive ever had, juicy and delicious. The deviled eggs were awesome (which they served me w/out the bourbon jam due to my current way of eating); a couple of burnt ends and some sliced brisket rounded out my meal - it was all fantastic! Its worth the drive to treat yourself to a great BBQ experience at Liberty BBQ located downtown in Round Rock, TX!

Priced like the best BBQ in town but theyre really competing with Poke E Joes and Rudys. No smoke flavor or ring on the rib or brisket and overcooked on both. Brisket dry and the rib bland. Id avoid anything standard here. The two saving graces were the potato salad and trash fries. The potato salad was a good take trying to be more like a twice baked and tasted like sour cream was mixed in the mayo. The trash fries were pretty great and worth the $15, just make those your meal. They layer some cheese in the middle of the fries and none of it was soggy.

Dear Management, I hope this message finds you well. I wanted to share some feedback regarding my recent visit to your establishment on Saturday at around 7 PM. While I found the food to be very good, I unfortunately had a less positive experience with the service. I visited to place a to-go order and encountered some difficulties with the service. I had to request a menu twice, and the bartender, who was serving us, did not seem attentive. For instance, he placed coasters on our table without acknowledging us and repeatedly asked if we wanted to order drinks, despite us indicating that we do not drink. He appeared more focused on conversing and laughing with other customers and changing the music rather than attending to us and other guests. Additionally, I noticed that the music was quite loud, making it difficult to have a conversation. This may be something to consider adjusting during peak hours. It was hard to ignore how red his face was despite him not being very fisicly active. There was no structure present just party. He did not provide an itemized bill, and when I asked, he ignored it, so we just left to avoid confrontation. Moist brisket was good, lean brisket was extremely dry & fries were very salty! Ask for them with light seasoning. I don t think the owner liked when I asked to exchange the very dry lean brisket for moist brisket. He seemed bothered by my request, but ultimately and why I am leaving a good review. He rectified the situation by exchanging the brisket & by thanking my husband for 25 years or service. Overall, it s a good and clean atmosphere. Bill for two was only $60 and that s a pretty good deal when it comes to BBQ. Will we visit again? Possibly! PS. My husband said those brisket deviled eggs are delicious.

I recently had my food to go at Liberty BBQ and was quite disappointed with the experience. The brisket was extremely dry, making it nearly inedible. The ribs were overcooked and tough, lacking the tender texture one expects from good BBQ. The turkey was just OK not particularly memorable but not terrible either. The mac and cheese, however, was the most disappointing; it was bland and lacked any flavor, even after I added salt and pepper. Overall, I would recommend going a second time, this could have been an off day for the cooks.

The food tasted great. I had the ribs, brisket, and mac and cheese. However the portion sizes dont match the price very well. I ordered a 2 meat plate and my son ordered a one meat rib plate. He had way more meat. You dont get extra meat you get 2 different meats for more money. The only complaints i have. But the food itself was great!! Everything tasted very good. Ill go back and just order 1 meat

This place will have you on Google searching the nearest place to get food and heading straight to confession for being dishonest the 6 times you were asked by the very nice people how your food, thats sitting in a Togo plate, because you are hoping a human at home will touch it at the very least expensive dog meal. We were refused service. I hate giving small businesses low ratings because I know how much this can affect them, but this was just not cool, and maybe seemed like a biased attack. We came by today to eat lunch. We told the employee were 4 people and that were going to wash our hands since they were full of dust and dirt from one of our projects nearby. When we were waiting back at the waiting line, we saw a couple just walk through the door and be seated deliberately before us. There were a lot of empty tables available and no justified reason for this to happen. We asked the worker if we could be seated and in a very rude and what seemed to be an intentional sign of agression they said they dont want to seat us. We were so tired we didnt even get into it, we just turned around and went to a different barbecue. So, unfortunately I didnt even taste the food and At the moment liberty barbecue sure as hell isnt worth my buisiness anyways. Work on your approach to clients. Really wasnt a fun 12 minute drive to the nearest Rudys

Well, it was disappointing, the brisket I know is greasy but this one was way too greasy. They didnt cut the fat out from between the layers. It was served lukewarm , with potato salad which was on the bland side. Couldnt taste any vegetables like celery, onions and it didnt have enough mustard or salt. The coleslaw was on the dry side. It could have used some more dressing on it. I couldnt taste the dressing which basically was shredded cabbage. Ribs didnt have much meat on them. Fries were tasty though.

We went for lunch with a total dining time of 4o minutes, which makes it a great lunch location if youre in the area. Highly recommend this place.

I had high hopes for some Texas BBQ since I was only in town for 2 days. But the best part of this meal was my server. And she had only been there 1 day! I think she said we were her very first table. Her personality was great. The food... was just ok. I got the 3 meat sandwich and was disappointed. The brisket didnt have any texture. Like it was cooking all day and was pretty mushy. The Sausage had a snap to the skin, but the inside was also mushy. No bite / texture to it. The beans looked HORRIBLY unappealing and didnt taste much better. The surprise star were the friend jalapeño strips. My wife had the ribs and she enjoyed those. I wish I had a better review... Sorry guys.

My mom and brother visited from Michigan. I m anted to show them some solid BBQ or so I thought. I ordered a half pound of smoked turkey and a potato. My mom ordered a 3 meat platter and my brother ordered 1/4 pound turkey with Mac. Unfortunately, without telling us, they put my smoked turkey with my brothers plate. Should we have known, I guess, but we were never told it was combined with my brothers. He ate his food all when the waitress came back and that was when she told us why I never received my food. Of course, there was no more smoked turkey as they sold out. No apologies from management or anything. Waitress was super nice and accommodating. With all that said, food was subpar and not a typical texas BBQ spot.

I ate there for the first time yesterday. Everything was amazing. The brisket was moist, and delicious even without sauce. The sauce had a great balance, and was a good compliment to the brisket. Food Review: Liberty BBQ To start, the only BBQ Ive really ever eaten has been Rudys, Blacks, and some others I cannot remember by name. My husband and I went into Libertys with just the want for good BBQ, and although busy, we were met by friendly staff and a down-home environment that makes you feel like your in a small town. For food, we ordered two meats and two sides: Brisket, Pork ribs, Mac and cheese, and pinto beans. There was not a large wait time and our food was on our table within ten to fifteen minutes. The ribs were really good, nicely charred, and pull off the bone. The Mac and cheese was absolutely cheesin and with the addition of their BBQ sauce and some pepper, was absolutely delicious. The pinto beans were good, not terrible, but could use something...more. The biggest disappointment however, was the brisket. It was dry and flavorless- having to add the BBQ sauce was helpful but didnt do much to improve it. Overall, I will give Liberty BBQ a 8/10 for customer service, wait time, ambience, and decent food.

1st vist. My wife and i split the fried pickle spears and the trash fries.. we couldnt eat it all. I ordered a special Saint Patrick ls day drink and it was amazing. Everyrhing was as it shoild be.The food was hot and full of flavor. The drinks were amazing . Will definitely go back again. Service was fast, friendly and was jist a comfortable place to be. They seemed a little short staffed, but Amanda ran the bar, played hostess, and helped the servers throughout the night wherever needed. I hate giving bad reviews but our experience was rough. The sides had little to no flavor. The meat was dry and the rib overcooked. We had to ask for bbq sauce which is odd for a bbq joint. The sauce was good and actually gave the food some flavor. Our server was nice but forgot drinks until we were ready to leave, and another employee seemed to just linger around our table a lot. If we come back to this area I d try it again in case it was an off night, but for Texas standards, the night we went I d prefer fast food bbq to what I did eat

I read the reviews and had to try it. BBQ is one of my favorite things to eat.. no desire to go back. Me and my friends went for lunch new place for us all... all had something different and shared 2 apps. Overall we all tried everything and all thought all the meats lacked seasoning and VERY dry brisket like a dry roast from oven. Not tender at all, same on ribs tough no flavor. Potato salad nothing special tasted like pickles. Cole slaw ok super mayonnaise tasting. Green beans soggy taste like from can with a little seasoning on top. Mac and cheese was the best of the sides.. if I had to pick. It was Cheesy I can say that! My friend had a burger she said dry and had much better else where. Fries ok. Queso kinda watery and again dry brisket. Deviled eggs are something I could not wait to try. And they were the best out of everything. Because of the jam stuff on them. Had at least some flavor which the whole meal was lacking. I dont write alot of reviews but felt the need to as it was a big disappointment all around for the group. Wasted my money for sure. We came in after exploring the Round Rock farmers market, and I needed food asap. The meat was cooked well and was tender, but not super flavorful--the bbq sauce was great though, so no worries. The fries were seasoned and amazing. The mac was uber cheesy and creamy. It was the perfect amount of food to be satisfied for a few hours until we got home. The server was also very hospitable, and the space is equipped with tvs showing todays college football games.

Fitting location for a barbeque joint downtown. The people are great. We were sat quickly and drink orders came fast. We knew what appetizers we wanted and they were brought out fast as well. Deviled eggs are amazing. There was no pressure for us to decide on our main courses, and it felt great to be able to relax a bit. Granted we showed up at 5:30 and it didnt get packed until a little later. Brisket is tender and moist, pork ribs almost fall off the bone. Spicy sausage is rocking. The brisket queso is good, but maybe not the best in town. Definitely worth more visits.

Food portion sizes seem to be shrinking on a regular basis. My CFS was like a junior size. My boys had larger sized CFS, but still smaller than a month ago. Use to be The Spot and now its just another bar. Wipe the dust off the walls and hanging ornaments, especially the Texas flag. Its covered in dust! Waitress was only fast to deliver the check, then swing by to check the tip I left. Maybe, tops, 20 total customers in the place. Getting less and less popular, and I see why.

This was my first visit to Round Rock, and the lunch at Liberty Barbecue was the high point. BBQ is extremely dry. Ordered a three meat plate. Pork ribs, brisket and mild sausage. They were out of chicken at 2:15 pm on a Wednesday. The bbq lacked moisture. It was so dry. The green beans were over cooked. The Mac & cheese was decent, a velvetta type of Mac and cheese. The banana pudding was the star of the show. It was delicious. Fresh bananas. Moist cookies on the inside. I still feel the bbq was a waste of $30. The service wasn t stellar. The waiter rushed us and had no personality. Ok, I generally dont do reviews but I had to say something after this trip. First, as Ive seen mentioned they have the please wait to be seated sign up but yell across the room to sit where you like, we waited approximately 6-10 minutes before we had a drink order taken, the drinks and brisket queso came fairly quickly, however the brisket in the queso was more like shredded beef than brisket, tasted fine but lacking, further the chips seemed like they were from the bottom of the bag as half were tiny pieces. Then when we finally were able to order, after being there a good 10 minutes after the queso arrived. After ordering we waited, with empty drinks for a good long time. In this time 3 other groups came in, ordered, and received their food...while we still waited. We were just about to ask for a bill for the drinks and queso when our food arrived. The food, where to start.....I ordered the 2 meat plate, I got two slices of brisket and one sliced sausage. My sides, the potato salad and mac n cheese were very much lacking, the potato salad tasted like standard sysco delivery, and the mac n cheese was watery and tasted like it was made with velveeta. The brisket itself wasnt awful, but Rudys or Pokejos are better and more consistent, and the sausage tasted store bought. My partner ordered the loaded grilled cheese with pulled pork and the cucumber salad, the salad wasnt what was in the picture and lacked a good deal. The grilled cheese....well all you could taste was texas toast, not really any cheese flavor and the pulled pork was tasteless enough to be overwhelmed by the flavor of buttered bread. I think the consensus was bbq day at the nursing home or hospital. The food was poor, bland, small quantity, and not at all what the reviews indicate. I guess a lot are left by visitors to the state. At any rate, the service was the part that was most frustrating. With the wait, being apologized about the delay twice and still being there for near an hour before getting our food soured me on returning, without even consideration of the food. The waitress was perfectly friendly and polite although appeared to be the only waitstaff not behind the bar. When we got the bill we were mollified somewhat by seeing that the brisket queso was not on it and as such didnt request a discount due to the wait. I wont recommend this establishment to anyone.

Very disappointed in our experience here. We came on Sunday around 1pm and they were only serving the brunch menu which was disappointing but okay. We could find things to get. However, when I ordered they were out of pulled pork so I opted for the waffle and burnt tips. The waffle was very small with only 4-5 pieces of meat on it which weren t very good, kind of tough. Definitely not worth the price. My husband got the chicken fried steak which was also small for the price but tasted okay. The home fries are actually tater tots which we were thrown off by. I ordered their Bloody Mary cause from my understanding it was supposed to come with meat on it & it didn t. My husband ordered a carafe of mimosa which was honestly the worst one we ve ever tasted. Came in here on a lazy Saturday afternoon and this place is pretty good. We ordered 1/2 of brisket 1/2 of pulled pork mac and cheese potato salad fries and cheese curds. My experience at Liberty BBQ was quite lackluster. While the wait time was reasonable and the parking was convenient, I found the food to be mediocre at best. The only highlight for me and my party were the Garlic Parmesan Green Beans, which were enjoyable mostly due to their novelty factor. I appreciated the friendly and attentive staff, which almost made up for the subpar food. However, I was disappointed to find a dirty piece of silverware on our table, which left a bad taste in my mouth - quite literally. Overall, my experience at Liberty BBQ was underwhelming. While the staff was nice and attentive, the lackluster food and cleanliness issues left much to be desired. If I had to rate my experience, I would give it a 2.5 out of 5. This is the best bbq I ve ever had. I love everything on the menu. My parents always said not to order chicken when going out to eat because you eat enough of it at home. Let me be clear: the food was EXCELLENT! Tender flavorful brisket, delicious sides (green beans, cucumber salad, Mac n cheese), succulent jalapeno cheese sausage, and OMG the trash fries! The ONLY reason this isnt getting 5 stars is that they are clearly understaffed, which affected our experience. Long waits to be seated, to be served, to get our food. Also, I actually ordered sausage and ribs but got brisket instead, which I didnt complain about because 1) it was tasty and 2) it clearly would have taken forever to fix. Everyone there was friendly despite clearly being stretched too thin, and there are help wanted signs everywhere. I do plan on coming back, as this is top tier barbeque. Top 5 easily, honestly jostling with Elgin Southside Market for my number 3 spot. But before I go back, please someone go apply for jobs here and help them out. We re in town for a football tournament. Found this place on Google. There was about 16 of us. They accommodated us quickly with no complaints. We received our food in a very timely manner. The food is Amazing and inexpensive. I got the 2 meat plate with ribs and brisket. Make sure you get the macaroni and banana pudding. Highly recommended. Amanda was our server and she was GREAT. Ordered the ribs, brisket, mac & cheese, greenbeans (parmesan), cucumber salad, fries. I did read other reviews which had said the brisket was dry, so I was skeptical.. but our brisket was juicy and flavorful! Mac and cheese was out of this world! Service was great! Attentive, friendly, knowledgeable about their menu items, personable! Price: The price was surprisingly great, considering most decent BBQ joints cost anywhere from a second mortgage to your first-born child for anything not listed under the childs plate section of the menu.. >$60 (AFTER tip) for both my wife, myself and my sons plate! After seeing the positive reviews here we were disappointed we didnt have the same experience. We stopped here after leaving Austin, and thought it would be a good quiet spot for an early sit down dinner, unfortunately we wished we would have picked elsewhere. We waited for her to seat them and come back...she never came back (but she definitely saw us) no one came to seat us. After awhile of standing there looking silly a gentleman hollered over to us and asked if wed been helped, we said no, so he tells us to sit anywhere. If we had the option to sit anywhere and were supposed to seat ourselves I was confused by the sign? Once seated we ordered cocktails and queso. I hate to go here but if Im going to be truly honest, thats at the bottom of the list for texas queso, and my drink made me wonder if the person who made it was actually a bartender, the ratios were very very off. The gentleman that sat us was also the server, and again being honest, we found his table side manner to be severely lacking. He was extremely curt with his answers, noooottt at all friendly, we felt like we came at a bad time or were bothering him. The entire experience felt like everyone was just waiting on us to get out. Im kinda overly bubbly sometimes and felt i should stop saying thank you so much since he didnt acknowledge me talking anyway. He did ask if we needed anything, but did so by yelling over at us instead of walking to the table, the effort to come to the table would have been nice but again we felt we were a huge bother. I ordered the Carolina BBQ pulled pork. They forgot the Carolina sauce first off, second Im sorry but Im from north Carolina thats not Carolina sauce in any way shape or form. Without that its just dry meat on dry bun (I did ask for no coleslaw) so I couldnt immediately eat since it was dry. My partner ordered the burger and some things were forgotten on that was well, disappointingfor the burger thats supposed to be a menu staple for the place. It didnt seem that there was any care or double checking when making our meal. The bathroom was absolutely disgusting, very obvious thats not checked. Our table had not been wiped down before we sat and still wasnt while we were there so everything was sticky. So, the service was nooottttt great, at all, food was not good and haphazardly put together, cocktails not great, cleanliness not great, unfortunately we both agreed we couldnt find a reason to make us come back. For a bbq and cocktail place in Texas, I think theres too many other places doing it right, which gives this place some real competition to live up to, and it doesnt seem theyre capable of standing up to that competition. It was an uncomfortable experience from start to finish and disappointing to say the least. (Id also like to add that I so understand there were tables with proper chairs, but once those chairs are filled the place can become an issue for those disabled. I personally really need seating with back support, the bar stools are best for certain customers but unfortunately not everyone, more chairs with backs would be great )

First, the menu on Google is wrong. The cost is considerably higher than listed. The three meat plate costs $10 more than was list on Google for the 4 meat plate. Second, the food is mediocre at best. When the sides are better than the meat something is wrong. Additionally, the portions are not as big as listed on the menu. Like all native texans Im a massive stickler for bbq. Liberty isnt the absolute best in Austin but it is head and shoulders above most. Their service was phenomenal from the second I walked in. Southern charm and willing to take time to explain menu items during a busy service. I will return to this location.
