Phenomenal is not enough to describe this place. The food, I would almost argue, dont listen to the description as it makes no sense, but then you should because you will recognise magic! Sourgough and Tomato ice cream? WTF no thank you... WRONG BEST ICE CREAM I HAVE EVER EATEN!. I came on my own as a solo diner, often its hit and miss on your own as you can feel overlooked. This service at this place was inpecable. So well taken care of, staff genuinely cared and listend and were so attentive. The first time I had the a lar carte as the Tasting menu seemed too bojie for one person. IT WAS PHENOMENAL food. So much so that I convinced a friend on my dwindling budget to go again for my last night in Austin. And have the testing menu. It was yummy. Admittedly i probably preferred the a la carte...but essentially you cant go wrong. Girl on your own in Austin reading this, put your face on and go. You will be so welcomed.

I took my best friend who was visiting Austin from San Diego for dinner on 9.20.24. The food was incredible. We had oysters, scallop, caviar corn bread and halibut. Each course exceeded our expectations and when we thought it couldn t get any better, the next thing blew our minds. Thank you Rudy, for amazing service, accommodating an ABBA song request and suggesting some incredible wine pairings - you made our night! Thank you Alex, for the amazing martinis made table side and the conversation, it was a delight to meet you! And a huge shoutout to the GM George, my dear friend, for making the experience unforgettable. Also every staff member welcomed us with a smile and lovely conversation. Probably my favorite restaurant experience in Austin to date. Dietary restrictions: I m gluten free and I was able to eat everything AND they had a gluten free sourdough mini baguette for me which was the best GF bread I ve had in my life.

To preface this review, I feel like this may be a one time experience and not a total reflection of the restaurant. My experience happened on 8/18/24 at 6pm. Table was not ready, despite having a reservation and the table had been empty. We had to wait at the bar for the table to be set. While this was not their fault, two screaming toddlers were sat at the table within arm distance. Not the restaurants fault, but it did contributed to the poor, romantic experience. We ordered bread with butter and a seasonal jam to start. It was fantastic. Very crunchy, yet soft in the middle. My main issue from this course was the silverware. The silverware had a black coating on it that was chipping away, revealing the silver under it. If you are going to choose to use silverware that s coated, at least rotate those out that are worn. My wife ordered the halibut and I ordered the Berkshire sirloin. I chose this over the coulotte because I thought the squash sounded better than the okra. He then repeated back to us and said, one halibut and one sirloin and we said yes. When our food came out, I was brought the coulotte with the okra that I didn t necessarily want. There was obviously some kind of confusion as I asked why does this have okra instead of squash. He went and grabbed the menu and said, you said sirloin so I assumed you wanted the coulotte. I see the confusion now because the pork chop says sirloin in the description . I guess I just don t understand how you could arrive that I wanted an entree that didn t say sirloin in its name when one of the things on the 6 item entree menu does says sirloin . Also I even said Berkshire sirloin when ordering so there really shouldn t have been any confusion. After looking at the pictures of the menus on the reviews, there must have been a name change on their menu recently, maybe that was the first day. That could explain the confusion by the server. Previously the menu stated Berkshire pork chop instead of Berkshire sirloin , according to the reviews. To be fair to the restaurant, they did offer to take back my dish and bring out the correct dish. I understand why they asked this, but my wife already had her dish. So if I wanted the correct dish, my wife would have to eat without me. I just agreed to go with this more expensive option that was provided instead of waiting a minimum of 15 additional minutes for the correct entree to come out. Overall, the coulotte was fairly good. The cook on it was probably medium rare which is usually how I would order it, if I was ever asked. My main gripe was the sauce. The okra was actually fairly pleasant but there was just something off about the sauce. I want to say it tasted like I was eating pure liquid smoke. I tried eating the steak with it but the flavor was just so dominant that I couldn t taste anything else. I ended up eating the steak and the okra, leaving the sauce behind. The portion was also extremely small for the price. The same price steak at Perry s would net you a meal for 2 days. Overall, just a lot of small things, in and out of the restaurant s control, really contributed to a poor experience. The table being ready when it s empty, the intimate seating, the damaged silverware, portion size, and the incorrect order are all things the restaurant could fix. It s hard to spend this kind of money and have such a bad environment. We walked away honestly feeling really bad. I feel like all of this justifies my rating. As I mentioned, my visit may be an isolated incident so feel free to go. If people ask me if I would recommend this place, I would say everything I said here. It could be an amazing experience if I visited again, but there are just too many restaurants in Austin for me to give it another try.

We were celebrating something very significant to us and wanted a really special meal and experience. Hestia delivered 1000%. The service was warm, pleasant, and attentive without being intrusive. The cocktails were original and delicious. The food was honestly one of the best meals Ive ever had. I had the halibut which was delicate, flavorful, and cooked to perfection. My husband had the chicken which he said was utterly perfect. We couldnt have asked for a more special, memorable evening.

Absolutely superb! I have been here 3 times now and have nothing but great things to say. From the attentive service, very educated sommeliers and scrumptious cuisines. You have to order any of their pork dishes, best I have EVER tasted. The tomahawk was very juicy and tender as well. Highly recommend this place for an anniversary or business dinner.

Popped in last minute and was able to get a table outside. Unfortunately the outside menu was the limited bar menu, but even with those limitations the food was quite a pleasant surprise! The Amaretto sour was truly fantastic and everything we had during our meal was very tasty! This gets a solid recommendation from me and we will be back to dine inside with their full menu. P.S. we went for a special occasion and the restaurant surprised us with Champaign and a couple items comped / on the house to celebrate. Truly elevated the experience, made us feel special, and much appreciated!

Where can you go when you dont have a reservation on your anniversary night but you want to be wowed by food and are willing to throw down on some good food? Here enters Hestia Bar Side. Bone Marrow & Crab - I love me some bone marrow and I love me some crab. I personally ended up taking the crab off mid bone and ate both separately. Both good - but I feel the marrow got lost with the crab on top. Beef tartare - by far my fave so far in Austin, Ive even had this dish at other restaurants since Hestia and my decision still stands. The mushroom miso topping added a unique umami that other tartares lack. The spelt cracker which I would assume made in house was a perfect thin crispy cracker. It let you embrace the tartare with a nice crunch. Crab Louie Tartlet - whoever in the world invented this decadent bite of goodness?! Ive never even heard of such a thing. Or did Hestia invent this? Either way, how can such a little bite pack so much power in flavor? And whatever the green outer shell was added a nice contrast crunch. We kept ordering this throughout our meal because it was so good (total of 8 to be exact). Halibut - Recommended highly by our bartender, I reluctantly ordered it in lieu of the pork shoulder. I guess Im from a weird mindset that if Im paying a high price - a meat of substance is more bang for your buck than a fish (unless its sushi ;)). Who better than Hestia to prove me wrong. This well exceeded my expectations. The sauce. The trout roe. Perfection.

Hestia was a wonderful experience! We came out to celebrate and decided to do the tasting menu. All plates were thoughtful, fun, and creative. Flavors were all well-balanced locally sourced. 3 years ago, I brought my boyfriend here to celebrate his birthday. It was an amazing 10/10 experience then and now, 3 years later it has only somehow gotten better. The halibut remains the best thing we have ever tasted, each year in a row. This year we opted for the tasting menu, and the staff went above and beyond to make him feel celebrated. The courses are timed perfectly, and we left feeling full (we got to enjoy the dessert the next day) we look forward to celebrating many more birthdays with Hestia.

Top notch service and amazing food! Hestia is one of my favorite restaurants in town and every time it has been a wonderfully pleasant experience. We went on my birthday tonight and they even had a card signed by the staff at our table. We had the scallions, halibut, and sirloin. All of it was cooked perfectly. We went for our anniversary dinner last Saturday and everything was super great! My favorites were all of the seafood dishes we had - tuna tart, himachi crudo, and the scallops! The steak was pretty good but not the star in my opinion, but maybe I just prefer seafood. I also loved the beets! The martin cart was perfect. Maybe one of the best martinis I have ever had. I wasnt thrilled that all of the desserts were dairy heavy so our waiter brought me an off the menu peach sorbet that was absolutely delicious. Expensive for the quality Birthday celebration for our son and we read all the reviews and was looking forward but were disappointed. The food is mediocre at best and the staff tries too hard to sound articulate but comes across as not genuine. We paid well over $500 and were not satisfied. Drinks are good but not the best. Started with Oysters and tomato tart. I would skip the tart and the oysters are from the gulf coast, so that should say enough. We had 3 small plates and those were decent. The beet salad, beef tartare, and Kampachi. Beef tartare was actually very good. The halibut is the best option on main menu. Our server was ok but not the best. Seems to be too much in a hurry and rushed us. My biggest pet peeve is when the server picks up the bill before we are done! It s extremely rude and after the cost I wasn t expecting to be rushed out. Portions are small and way overpriced. There is not much to Hestia and would not recommend.

TLDR: Skip the tasting menu. Good staff, tasting menu was overpriced unless you want 3 sorbets (2 of which are your dessert) and shrimp head/shrimp tail on two separate dishes, AND it ll take you 3 hours. Small plates are understandable but when each is one small bite, it was excruciating to drag it over 3 hours before the significant items at the end. It takes away from enjoying the process. Also I had hair in one of my dishes, pics attached. I booked a table for my wife and I for our anniversary and I have to say the offerings were overpriced for the $195pp tasting menu. Not only did the entire experience take over 3 hours, three of the items on the tasting menu were small balls of sorbets - not very creative. One of my dishes for the pig ears had long hair, and when I raised it to the staff they were apologetic but mentioned it was the pig s hair. Pigs don t have long hair like women, but either way it would ve been nice to check that ahead of time. Lastly, the portion sizes are tiny. You ll get a small piece of the shrimp tail, and then part of the shrimp head as two courses. Another course will be bread. Bread, really??? The steak was the only good part of the entire experience. Yikes. Cocktails were okay, your basic offerings and somewhat creative. The staff was great, namely Becky and Blake. The hearth was pretty cool. Overall we were severely disappointed with the experience, food variety and price. Would not repeat, and certainly would hope they check for hair in future dishes especially when it s at that price point.

My boyfriend took me here for my birthday last month and it was one of the best tasting menus we have ever had. We are big foodies and have had a lot of tasting menus- and this one was top notch. Service was great- the only hiccup was a customer who came in and sat next to us with his family and had UFC playing so loudly on his phone? First off why? Also like maybe just don t? This obviously threw off my vibe haha and the manager was super quick to get our table changed with zero issues. They were very professional and kind about it. That meant a lot to us. The atmosphere was fun and sexy. Definitely a fun date spot. We went around happy hour time just as the sun was setting. So it was super dark in there but I can image at night time, it being even more romantic. Food was AMAZING. We had around 15 courses and had so much fun going through that food journey. There was only one dish out of the 15 where we weren t super impressed with but the other 14?! 5 stars. So creative and such unique flavors that our palates had never experienced before. I must also note that the scallops here- best I ve ever had in my life. Highly recommend getting those. That was our favorite course, though it was hard to pick. Oh and I had some kind of cocktail that had strawberry and gochujang?!!!! Yeah, get that. We are already talking about coming back for another round. Best birthday dinner!

This was a great dinner. We were referred by Pablo at Taverna. Our server Colin and his back waiter were extremely knowledgeable and walked us through the menu in great detail. I have been to Hestia twice now. It is an excellent spot to celebrate a special occasion. The service was impeccable. Brian and Jackson were attentive, knowledgeable, and kind. The team makes an effort to make the experience personal - Jackson even wrote us a list of his recommendations for live music in Austin. What an experience!! This place deserves all of the hype and is definitely worth every penny!! My boyfriend surprised me with dinner here for our anniversary, and the staff went above and beyond to make it such a magical and memorable night!! We started with some champagne, and then got the nice spice and another cocktail I don t remember the name of but they were delicious and had so manny different flavor profiles. We ordered two of the warm crab tarts and they were delightful. My boyfriend ordered the halibut and it came with this smoked butter sauce that was absolutely to die for. I ordered the 8oz dry aged wagyu steak, it was so amazing, who knew you could pack so much flavor into a meal! We will definitely be back and will recommend to all of our familly and friends! My partner and I decided to try the tasting menu. It was very underwhelming. The presentation of each item was aesthetically pleasing. But some items were undercooked, none were well spiced. They desserts, sourdough bread, & miso thing were okay. To my surprise, the whole experience was nearly 3 hours! I was ready to throw in the towel so many times. The waiters (Ruben & Paige, i remember) were nice and attentive, at least. The drinks were good (nice spice and star sign - with tequila instead of chopin), nothing to rave about though. This place reminds me why I love restaurants. We went to Hestia to celebrate our anniversary and ordered dishes from the a la carte menu. Some standouts were: - The pork chop. It was better than some Wagyu I ve had before, it was that flavorful, tender, hit-you-in-the-face delicious. (We also had Hestia s Wagyu, which was also excellent) - Broccoli. Any chef/kitchen that gives as much care and attention to vegetables as they do proteins is worth your tastebuds. - Scallops. Luscious, marinated in bone marrow, another oh my god moment thanks to these bad boys. - Oysters. Bright, acidic, fresher than fresh. A wonderful way to start a meal. I couldn t rave more about the service we received. When we got to our table, we had the sweet surprise of an anniversary card signed by all of the staff working that night. It was so unexpected and really made us feel special. Our servers Jackson and Emily were attentive, super knowledgeable of the menu and ingredients, and took impeccable care of us. Other staff members wished us a happy anniversary, asked us how many years we were celebrating and how we met it made us feel like we were a part of the restaurant instead of just one-time visitors. These days, it s rare for places to strike that tone successfully. The Hestia staff did it with ease. The concept of a modern hearth might not conjure up a clear picture in your head right away. Unforgettable dining experience at Hestia, made reservations on OpenTable and seated easily. Went with group 4 which allowed us to see and taste a variety of dishes. First, this place is not for those on a budget. My total meal cost $100 and I left feeling like I would have wanted to eat more, because one- taste, and two- the portions are small. Would not go here if you have a medium to big size appetite and are on a budget. Hestia = goddess of Hearth (floor of a fireplace) aka it smells like the inside of a Smokey fireplace. We went at 6:30 and the place was dark inside. It was a bit difficult to see. Definitely added to the grey black allure of feeling like I was in the midst of smoke and burning warm wood. If you go to the bathroom, theres a recording explaining the history of the goddess playing while you try and relieve yourself. Smoked crab tart ($8): a single bite sized cracker a little bigger than a quarter thats topped with crab meat. This was surprisingly delicious and the flavors really lingered in a delightful way. It was just for the taste, definitely didnt satisfy any part of my hunger. Would get again because it tasted great. Oysters ($24) came with 6. This was good. Shareable in the sense there are 6 but again one slurp and bite and its gone. Im not sure which small plate it is, but my friend got a charred Smokey bread with fruit butter spread. She said she enjoyed but also didnt finish it. The bread makes a mess (they encourage making a mess) due to it being.. charred and Smokey. Beef tartare ($22) the cracker was massive, like half a dinner plate. The meat was cooked perfectly. The combination was stellar. Shareable. Scallop ($28) 100% get this, it was a perfect buttery, well cooked seafood dish that absolutely made me in want of more, this is not shareable. They come in single or double single scallops. Halibut ($46) the STAR of the night. Wow! Im still dreaming of how perfect this dish was. If you enjoy fish, this is dish you need to try. I wouldnt change a thing. Its on the saltier side but was perfectly placed with the overall meal. Phenomenal. 8 oz wagyu sirloin ($65) well prepared, but they wish they got the halibut! Bunuelo ($14) fabulous dish. The gold leaf is pretty but zero taste and added nothing but flash to a dish that absolutely needed none of it. The pairing of flavors was so enjoyable and refreshing. I would get again. Sourdough ice cream ($14) single scoop of ice cream that tasted of Smokey bread. Also, there are tomatos in it. Kakigori ($20) stunning dessert. Think of Hawaiian shaved ice but on steroids. I couldnt believe how mouth watering this was while it was IN my mouth. They recommended sharing for 6 people with this dish. Tasted like the best apple sauce ive ever had in my life mixed with shaved ice, delicious cream poured over and the best horchata ice cream I have ever had in my life. This is a must!! Overall, a dining experience Ill never forget. Every dish had its own unique flavor that made you want to think and savor before swallowing. Would go again (on a not so empty stomach or when Im rolling in cash). Location: there is no sign indicating the restaurant from the street. Its next door to Kalimotxo on the ground floor. There is a parking garage that you have to pay by phone (no tickets) that is attached to the building Hestia is in. Service was definitely top notch. My water was never more than 2/3s empty. Waiter was very knowledgeable across food and drinks and made appropriate recommendations. They prefer bringing food all at once, which means everyone has to finish their small plates all at once before they bring out the mains. Just something to keep in mind. Beautiful restaurant with a nice view of the city for a date! Great atmosphere and service. Each dish was explained excellently by our server. I had the 8oz Texas wagyu. It was amazing and cooked just right. I was nervous about the celery puree but it was so yummy and was presented beautifully. The sauce on the steak topped off the dish! My husband had the Berkshire pork chop and said it was the best pork he s ever had. It was our first time ordering pork done medium rare, no regrets! It was like thick juicy bacon. The accompanying sides paired perfectly with the dish. For dessert we tried both the buñuelo and the chocolate fondant! The buñuelo being our favorite. It s not a traditional buñuelo and is stuffed with deliciousness. The smoked apple butter reminded us of caramel. The chocolate fondant was very rich so make sure you are a chocolate lover if giving it a try! We finished both desserts off.

We tried the tasting menu at Hestia Saturday evening with some friends. We had some dietary restrictions so we asked for a pescatarian menu which they said they would accommodate without any issues. I m also pregnant so I couldn t have raw seafood. Most of the courses were delectable and prepared really well. However, I was served a course with pork fat that I could not eat and it was a little difficult to get the server s attention. After I did finally get his attention, I was told there was no other replacement for it and I could choose not to eat it. For another course, they served a raw oyster which I also could not eat. They apologized for it and told me they would bring a replacement course which they never did. Overall, considering this meal was $250+ per person, I m left disappointed with the lack of attention and oversights at this price point.

My first experience at Hestia was simply amazing. The unique hearth-centric menu allowed me to try dishes Ive never had before, all perfectly cooked over the open fire. Each item was full of complex and delicious flavors that worked together harmoniously. From the juicy steaks seared to perfection to the fall-off-the-bone vegetables, every bite highlighted the mastery of the chefs. The wine pairings were also exquisite, complementing each course flawlessly. My second visit didnt quite live up to my first experience. While the food was still unique and overall well-executed, some dishes missed the mark. The proteins werent cooked as evenly and some sides were underseasoned and overcooked. Additionally, the service was less attentive than my initial visit. However, I understand restaurants can have off nights and I still saw the passion and potential at Hestia. I have no doubt they will continue to refine their techniques and provide unforgettable fire-kissed meals. We did the tasting menu and overall it wasn t worth the price. The food was pretty great at time intensely excellent, but the service was so lackluster it started to take away from the meal, if you are going to charge Michelin star prices for a tasting menu you service has to deliver too. We were sat in a booth which was incredibly awkward for the people on the inside when getting marked and cleared for courses, the first 4 courses were in very quick succession and it was just poorly delivered by the staff. The food descriptions were vague and delivered with a seemingly lack of knowledge about what they were describing. The restaurant is beautiful and the food is quite good, actually had the best scallop dish of my life, but the service was just so far removed it wasn t worth the price. Alexis out captain seemed removed and just not engaged, we were visiting from out of town and just no intrigue or anything about our being there. Several times when clearing plates the gentleman would stack all of them and nearly dropped them on me twice lol. My dad reordered a beer that took 30 mins to arrive, just overall forgetful and not engaged at all and for that price point is not acceptable. Our server and table runner ensured that our cup were always filled with water and the cherry on top was a greeting from the manager. The southern hospitality was a nice treat for us visiting Californians. Must order: raw fish in jasmine infused olive oil, scallops in tallow over shells, and the wagyu tartare! Mmmmh. The seafood were so fresh. Even though Austin isnt known for its local catch, this restaurant ensured the highest quality seafood possible. You can pass on: the Alabama oysters werent impressive because I didnt like their smokey salsa sauce. I prefer the old fashioned lemons & horse radish style but it wasnt terrible by any means. In conclusion, we were happy to have picked this place for our special celebration and they helped created some wonderful memories for us. I picked this place based on the great reviews and the pretty photos of the food and best decision ever! My one feedback for the staff is that I did mentioned not liking a certain ingredient (raw onions/scallions) and this detail was overlooked; but it wasnt a big deal, I just delicately picked around it because it was a preference and not an allergy.

My wife took me to Hestia for the 3rd year in a row for my birthday. All I can say is that they have gone downhill and seem to be resting on their laurels. My wife reserved one of the chefs tables, since it was a special occasion. When we arrived, both of them had been given to other diners. Bummer #1. We ordered the oysters. They were out of the oysters for the a la carte menu despite the fact that plenty of people who ordered the tasting menu were enjoying the oysters- and come to think of it, we werent offered the choice of the tasting menu. Bummer #2. For our main course, we ordered the rib eye with the potatoes. Main course = Bummer #3. First, the potatoes just didnt taste good, a classic case of chefs who try to get too fancy with a nice, simple product like a potato. We ordered the rib eye medium rare and it came out blue (basically uncooked). They re-fired the same steak, which is huge pet peeve of mine- I mean, for that much $, cant they get the temp of a steak right? And then to re-fire the same piece of meat it just doesnt come out right. Im a director in the F&B industry- all of this was just plain disappointing to begin with, but we were offered zero apologies and zero guest recovery. Everywhere Ive ever been on my birthday or my wifes birthday, its pretty standard to get comped a dessert, especially when youre spending north of $500, but none of that for us. The floor manager (09/21/2023) was disrespectful to both me and my wife (she basically walked away from us as we were trying to resolve the steak issue) and the only thing that redeemed the situation was the very nice and polite server who was caught in the middle of all this. Its really too bad, since we really enjoyed Hestia in the past, to see a once promising restaurant go downhill like this once theyve had a taste of success. Were never going back.

We came here for an industry event dinner. Lovely restaurant, absolutely beautiful interior and top notch service. Alex, our sommelier, was phenomenal. We had a variety of appetizers and shared entrees. The bread, the scallop appetizer, the mushrooms, and the Halibut entrée stood out the most. Incredible experience with tasty bites, filling mains, and excellent service. I was worried I wouldnt be full, given the small starting morsels, but I couldnt even finish my main, I was so stuffed. The service couldnt be better, either, with the staff all taking care of all the guests. They were also very careful about my food restrictions, making adjustments to did as needed. My partner got us reservations for my birthday nearly a year ago and Im still thinking about how disappointed we both left. We frequently bring up how much we wanted to like it. We spent close to 450$ for the 2 of us. We did the chefs tasting and portions were tiiiiiiiny. We almost always opt for the tasting menu when its offered, we understand that it wont be large or substantial, but these portions were miniscule, less than a bite. Now tiny portions is not a deal breaker, especially if the food is outstanding. Unfortunately the food was lackluster and didnt have the complexities or wow factors to justify the portions or price. We left hungry, disappointed and wishing we had spent the money elsewhere . We ended up picking up food on the way home and enjoyed it much more.

My wife and I had the best experience at Hestia. The food was absolutely amazing and the service was 5 star. I highly recommend speaking with the sommelier to help you choose your wine. He did a great job pairing our meal and our waiter, Jackson, was perfectly attentive and had great recommendations. Definitely don t pass on the scallops, they were hands down our favorite. We also enjoyed the pork chop, wagyu bavette, and kampachi. All delicious. If you re looking for a classy, mouth watering experience, this is the place. Great for a nice date night or celebration.

We celebrated our anniversary here, and my husband will definitely be back to try some more food! We started out in the restaurant next to the loudest table in Austin, but with a cute Anniversary Card. The server, immediately, offered us another table, that was away from the loud groups, VERY NICE. They did offer us some champagne, in a wine glass, which was also VERY NICE. The first half of the meal was DELICIOUS, but the flavors of the second half were not nearly as bold, other than over saltiness and sweetness, from the main courses and desserts. My husband will be back for some Scallops and a specialty cocktail, one day!

We eat out frequently and were super excited to try Hestia. Unfortunately it did not live up to all the hype. The staff were all friendly, the drinks good, and the oysters were delicious (and I don t even like oysters.) However, the service was so slow. Though greeted early, we waited 20 minutes for our drink order to be taken and longer for food. We came in at 7 and left after 9 without even ordering desert. Next, the food wasnt anything special that one can t find at a dozen different restaurants in downtown for the same or less value. The salad was a over dressed, the wagyu bavette was over salted. My husband s food was fine, but definitely not worth the $100+ price tag. We spent well over $300 for slow service and mediocre food.

A delightful experience! I d definitely come back next time I m in Austin. The food, service and ambiance were all wonderful. We began our meal with the potato & caviar (bite-sized) which were a lovely amuse-bouche to get us started. Followed this up with the heirloom tomato (served with a delicious vinaigrette), the grilled peach (great balance of sweetness from the peach + smokiness and fat from the guanciale), and the crudo (small but mighty and refreshing). We had the 8oz Texas wagyu bavette (cooked medium rare, as recommended) which truly sang. Even the side of smoked carrots were some of the best I ve had! We shared the buñuelo and seriously considered ordering a second (which we might have done if we d had any room left)! Our drinks were outstanding. We started with cocktails (bad rabbit and 93 negroni) and then moved to wine later in the meal (the sommelier gave us great recs). We finished the meal with a sweet Turkish dessert wine (royal tokaji) that blew us away.

The chefs tasting was SUPERB! 99% of the staff worked very graciously together. There was only one lady with long hair with a snobby type attitude but she only came to the table once so I was glad to see her go. Our server was AWESOME and the gentleman serving the wine was so pleasant and welcoming! The decor was simple but the food was far from that. The wine selection is beyond amazing. Wow, there are some great restaurants in Austin but Hestia can make a legitimate claim to being the best restaurant in town. First, it was our anniversary anditerally every person we encountered in the restaurant went our of their to wish us a happy anniversary and left a hand written note at the table signed by the wnole staff. It was a lovely personal touch. The chef has clearly crossed into artist territory, a true master. The service is above reproach, the environment and space is delightful, and the food... words cant really do it justice. While everything was thoughtfully and delicately created, the caviar service is just beyond. As great as every dish was, without exception , I have to consider just ordering three of those next time. Instead of the traditional blinis, chef delivered handmade, heart shape waffles with just a subtle hint of green onion that delivers a surprising and delightful kick at the end of each bite. And you have to save room for the kakigori. It is actually better than it looks and it is just visually beautiful. The delicate balance, the artfully delivered flavors, the service, the whole presentation and experience, Hestia delivers on every level. Its a must on any fine dining list in Austin. Cant wait to go again.
