I visited Stillwells in April 2024 and again this past weekend during the last weekend of Dallas Restaurant Week. Stillwells, located inside the Swexan Hotel, offers an exceptional dining experience. My recent visit was truly memorable. I enjoyed a delicious 4-course meal: Caramelized Onion Dip, Caesar Salad, a perfectly cooked 6 oz filet, and Grilled Peaches for dessert. The steak was cooked to perfection, and every dish was full of flavor. Our server, Joel, was outstanding attentive, timely, and genuinely pleasant. He even named a mock-tail after me, a mix of pineapple juice, ginger ale, and strawberry that I created. The setting was intimate and dimly lit, creating a cozy atmosphere. While we dined indoors, the terrace with its city view would have been a great option as well. The Swexan Hotel also features a speakeasy on the bottom floor, which adds to the charm of the place. The hostess was very friendly and even took some pictures of me, and the manager was equally pleasant. Overall, Stillwells continues to impress, and I highly recommend it for a special night out.

went for a birthday. Atmosphere was really pretty and nice. Filet was very hard to chew. Even had it remade but genuinely was too tough to eat. Our waiter was really sweet about it though. Lamb duo, salmon, sea bass and hangar steak was nice. Not a peanut butter fan but the pb dessert was phenomenal. The whiskey apricot dessert was okay but nothing crazy. Oysters were amazing! It was understandably busy and we had to wait a while for drinks and for our waiter to check on us but it was mostly worth it! 8.7/10 . Very lovely atmosphere great for dates or intimate celebrations

By far the best steakhouse in Dallas. Super professional service and quite possibly the best steak I have ever had. We were hosting friends from out of town. They were super impressed. The sommelier recommended a fantastic magnum and really knew his stuff. Have a drink downstairs after for a lovely little night cap.

I walked in and met Derick the GM and he was very friendly to me. Showed me a quick tour of the entire restaurant and let me pick my seat in the jazz music dining section. The place is dim lit and very classy. The food was absolutely amazing. I had Caleb as my waiter and he exceeded all of my expectations and beyond with the timing of refilling my sparkling water to bringing my food. The salmon was some of the best I have had and was very tender with amazing taste. I normally do not get dessert after my dinners however, I could not pass up this opportunity at this restaurant so I got the carrot cake and it was some of the smoothest most delicious carrot cake I ve ever had. I have had quite a bit of carrot cake through the years. It s one of my favorite cakes that is made for my birthday from scratch. It was really good but not as good as my mamas. ;) Would highly recommend this place to anyone. Exceptional!!!!

Food was absolutely amazing - got the foie gras donut, 12oz fillet with truffle butter and the peanut butter bar. No notes on food so amazing. Why I m giving 4 stars is the service wasn t as great as I expected for the caliber of place. Servers were super busy understandably but I was never checked on. I had to reach out and grab someone to get a menu or water or order a drink

Was ok, I eat my steak medium rare and I m fine with more rare, but this was undercooked and pretty cold, hadn t even heated enough to start rendering the fat. I sous vides at home and seared again and was pretty good. The Caesar salad was good but a pricey Caesar ought to have whole anchovies, m not sure there was even anchovy in the dressing, nothing particular exciting, old fashioned was decent. The view is fantastic but for the same price I ll head over to monarch where I know I m getting a great steak. Overall it s not a bad place, just for the price, the market it Dallas for a good steak is saturated and there s a whole list of places with better food.

This is such a lovely place, overall a good experience and would give it a second chance. Great decor. Service was good, on the slower side. The food was good, and the wine list is great. Disappointed on food and service given this is in a 5 star hotel, and maybe expectations were too high. Basic things like place settings not being set for me after multiple waiter visits without me asking. Waited 25 mins to get the wine. It gets pretty loud near the bar, so maybe not the best place if youre wanting to converse. Thank you for the experience!

We were super excited to try Stillwell s but unfortunately the whole experience fell flat. The evening started by not getting waited on for probably 20mins (honestly, not our waiters fault, he was also working as the bar tender, we should have had a dedicated waiter). The first goof up was with our drinks, a few people were given the wrong beverage, but they were all fixed so we moved along. We waited close to another 30-40mins to place our order, waiter would swing by for 5 seconds and leave without asking if we d like to order. We finally got our orders in and then the mistakes with the food started lol. We ordered deviled eggs for an app and got dumplings. We ordered a Caesar salad with no croutons (gluten allergy), it came with croutons. During the main course, we got an under cooked baked potato which was replaced with mashed potatoes that resembled soup - we had another plate of mashed potatoes on the table that were great!! We received a steak that was so overcooked (ordered medium), it just made everyone laugh. If you like salt, you d love the mushrooms since that s all you could taste. Everyone s favorite part of the meal was the bread. Parking: Free valet with dinner

My boyfriend is a meat lover and I chose this place to celebrate his birthday, the experience was fatal, I reserved a large space to enjoy with our friends but there was a fight next to our table, the show was embarrassing, it was only fair that they took out o They relocated those who were fighting, on the contrary they made us uncomfortable and moved us to another table to a super small table where my 6 guests were next to the fireplace, we were so cramped that we were so close together that my friend felt the heat of the You call awkwardly in his face, no one said anything so as not to ruin the birthday. But it was too late to avoid the bad moment. It is the first place that I see that makes those who behave well uncomfortable and leaves those who fight with a very strange criterion of attention

Absolutely amazing dinner! From the fantastic food, to the remarkable service, it was an unforgettable experience. The wild boar Ragu may have been the highlight, which is saying a lot considering we also tried the tomahawk, as well as many of the incredible sides such as cream corn and Brussel sprouts. Not to mention the personalized service we received! Our servers Jackie and David were very knowledgeable of the menu as well as quick to bring me an excellent old fashioned made by the bartender, Shelby. Kelsie the sommelier also made a great recommendation on wine. Finallly, I should mention that Derek, the GM was very welcoming and friendly and invited me to come back again. With such an amazing menu, it s hard to believe you could top it with an amazing staff, yet somehow they manage! Having tried many steakhouses here in Dallas (as there are so many to choose from) I can honestly say there is truly something special happening at Stillwells.

From the beginning everyone was so accommodating and warm - which is not always the case when we bring a toddler to a nice steakhouse - but everyone here went out of their way to make sure she had everything she needed. We just returned for our long overdue second visit last night and it was nothing short of amazing! We ate on the terrace our last visit, which was beautiful, but reserved a table in the bar area which has a swanky, aesthetically pleasing ambiance. On this visit, we decided to go for a lighter route with cocktails and a few plates to share. For cocktails, I strongly suggest the Summer Fling (a cocktail with vanilla, lemon and egg whites), the barrel aged old fashioned, and tequila cocktail (can t remember the name of but it starts with La ) which had strawberry and other refreshing ingredients. They also had at least 4 or 5 non alcoholic cocktails which I will definitely be back for! For food, we split the HWD steak tartare, the caesar salad, and the wild boar rigatoni which were all delicious. The portions were generous enough to where we weren t even able to finish all of it!! If you re going for steaks, they have a menu full of their HWD beefs (Akaushi beef locally raised) which come directly from the Harwood Farms and start in servings of 12 oz. up to 24 oz.! The HWD meats are delectable and mouthwatering, but they also have their classic cuts which offer smaller portions including an 8 oz. filet mignon (their most affordable cut - $54) & 10 oz. filet mignon for those who like to save a little room to enjoy more of what the menu has to offer. Their menu includes a variety of smaller dishes to enjoy including cold appetizers like deviled eggs, prosciutto & melon, and seared foie gras; hot appetizers like beef dumplings, tempura lobster tail, grilled oysters, roasted bone marrow and crab cake; raw bar options including grilled oysters, yellowtail crudo, shrimp cocktail, and towers; caviar service; soups & salads which include lobster bisque and a great wedge; and plenty of sides. Some newer sides which we can t wait to come back and try are the creamed corn and brussel sprouts. We often find ourselves going to fine dining specifically for the steaks or seafood, and absolutely loved getting to take advantage of trying lighter dishes that we wouldn t usually try to avoid leaving with a food coma before going out after! We received phenomenal, over the top service from everyone including our server, Alex, and also got to visit with the other bartender, Shelby, and manager, Dylan. All of the staff were super sweet and friendly which makes for a very inviting environment and we can t wait to return again! Their main dining room has a dim romantic ambiance and they also have an intimate private dining room which is great for private parties! I also always love getting a picture of the neon smoking cowboy sign on the way out. :) Before leaving Hotel Swexan, we discovered that the hotel bar (Isabelle s) has a happy hour that s about to be extended from 3pm-6pm Sunday-Thursday and live jazz every Thursday from 5pm-8pm with a DJ after! They open at 7am and also serve breakfast, lunch, and light bites later in the day. If you haven t been to Hotel Swexan yet, definitely do not sleep on it!

I just want to preface this by saying that this was my second time here and the first time was decent, but this time was super disappointing. It took over 40mins to get drinks after we were seated, which to me is completely unacceptable. I ll give it a pass if they re slammed, but the restaurant wasn t even remotely full. When they finally brought drinks they brought my husband the wrong order. It was my birthday dinner and they never came by to apologize for the delay and never offered a dessert. It was just a weird experience, definitely not what you would expect from a high-end steakhouse. This review is not meant to deter others from coming, because the food is good, but more for constructive criticism. Do better.

First of all, the venue is beautiful. A very classy place that really impressed us. However, we were not so impressed with other parts of the dining experience. I will list them here: It took quite some time for our waiter to come to our table. When he finally came, we were going to order drinks. I asked for a recommendation for a Sauvignon Blanc and the waiter said that another person was going to come over and talk to us about the vines. That person never came. When we then decided to order a wine on our own, we were told that wine was not available. Instead, the wine guy came over and presented us with 2 more expensive wines and said that he was not trying to upsell us. We picked a more expensive wine based on the availability of wines. What should have happened here is that we should have been provided the better wine for the price of the original wine. The waiter mumbled something about comping the drinks, but he never did. 2. We ordered some appetizers to go along with the wine. They were great. However, after a while the waiter came back and offered to take our menus from us. We had to remind him that we had not even placed or order yet. He brushed it off saying that he was just testing us or something stupid like that. 3. Next it was time to place out orders. I wanted to order the Wagyu beef. Was told it was not available, so I ordered a 10oz filet instead. I ordered it Medium-Rare. It came out Well Done. Had to send it back to get a new file, which was cooked the right way. 4. We also ordered Potatoes au Gratin as a side. The potatoes were undercooked and hard. 5. The women at our table ordered the tile fish. They both did not eat it because they both claimed it was chewy and overcooked. 6. The women also ordered martinis. They did not come out in martini glasses. However, we did see that you all DID have martini glasses. The point of all this is that I dont think you can charge prices like this for this type of service or lack of food quality. We left really disappointed and will have a tough time recommending or going back. Beautiful place, mediocre service and food quality. I hope someone takes this review to heart, because it can definitely be a trend many others are experiencing as well.

Had dinner here as a party of 5 (2 were hotel guests) and these are things we agreed on collectively. For reference we are comparing to Nick & Sam s, Town Hearth and Dakota s that we visited on this trip as well. 1. All of the food was heavily salted 2. Martinis & Old Fashioned were terrible 3. The service was very poor. The waiter was not able to make any recommendations or offer any specials. He was not attentive making us wait 30 mins before returning for orders or drink refills 4. The atmosphere was very nice and the bathrooms were clean and nicely designed. 5. The crab cake was soggy lacking the crisp outer crust Unfortunately it falls short for us along with some other issues within the hotel outside of the restaurant.

The hotel is beautiful but they need to get it together for the price and experience they are trying to create. Dined at Stillwells and whilst the menu is interesting and slightly different from the usual Dallas Steak House menus, the service was appalling. Our side of the restaurant was being handled by one waitress who aside from her slight attitude was obviously having trouble keeping up with the tables whilst the tables next door seemed like at least 4 different waiters were at their service. We were not the only ones who seemed unhappy with the service we received. Wouldn t rush back and haven t recommended it based on the service. For the price and experience they are looking to create they need to do better. Went back to the hotel last night to give it another chance, after a lovely dinner at namo and pre dinner drinks at Bar Colette. The lobby bar was full of very young adults playing grown up and the club at 11 pm was apparently too busy to let us in. Not sure if the one doorman was trying to create an allure of busy but there was not one person waiting outside and being told a 30min wait in the wind was a bit much. Disappointing all round!

What could have been a lovely evening was quickly turned into a nightmare. To make a long story short, I was served a drink that included shards of broken glass. I was not going to write a review until I read another one from an employee about the egregious health and safety missteps that are clearly a systemic issue here. While I did not require medical attention, someone else very well could have. While they claimed they dont know how this could have happened, if you talk to a bartender, they can tell you exactly how (lack of using a scooper in the ice bucket -- required by health and safety codes). I was denied a copy of the incident report. Aside from the severe lapses in judgement by kitchen staff and management, the cold crab cake and lackluster service do not warrant the price point of this restaurant. I would stay away.

An impressive Sommelier presentation is the perfect complement to the well curated, and affordable menu for wine enthusiasts and novice alike. Stillwell s offers an array of elegant seating options throughout 3 spaces including a cozy balcony for their diverse clientele, ranging from the young and elegant to the seasoned perfectionist. I chose to dine centerstage, at the wonderfully stocked horseshoe shaped bar which comfortably seats 12. Cesar Salad - For a table of 3, we shared the Cesar salad and lobster tails. The waitress mentioned the Cesar salad is a bit small but allowed us to add a half portion (for half the cost of a full portion) which was nice. However, the taste was mediocre. I m serious about my Cesar salads and it was too salty in some bites, as if they sprinkled salt on top but didn t get it mixed in very well. Lobster Tail Bites - They were actually pretty good. It comes out on thin wooden skewer sticks (probably to keep the lobster from curling while being cooked). Lobster wasn t tough or fishy but somewhat sweet. The tempura outside was a good texture and taste along with the drizzle of a sort of spicy mayo sauce. 8 oz. and 10 oz. Filet Mignon and NY Strip - The steaks were fine, but imo, whatever cut of beef you re ordering at a steakhouse, it better be cooked to order and melt on your mouth with flavor. Stillwell s did not meet that standard for me. My 8 oz. filet was undercooked (asked for medium), while my husband s NY strip was overcooked (asked for medium rare). The meat lacked a lot of flavor, and their homemade steak sauce was a bit too sweet for my liking. It didn t pair well with the mediocre meat. Creamed Spinach - Hard pass. I know it s called creamed spinach but the sauce tasted like someone just poured a pint of heavy cream into the side dish skillet. The consistency was quite liquid and watery instead of the usual viscosity of creamed spinach that we all know and love. The spinach in it was also too distinguishable, if that makes sense. You could identify the cut up leaf shapes, so maybe the whole dish was just undercooked and needed to be simmered for longer. There was also this thick crusted top made of some breading or crumbs and Parmesan it seemed like. It was SO salty. We try to pick out the spinach from underneath it and wipe some of the cream off. Also kind of a small portion considering the waitress said it would be a good amount since it s family style . I think it was fine for 3 people to share, maybe 4 if you re ordering 2 other sides to share. Shoestring Fries - Good but they only serve with mayo. I m sure we could ve asked for ketchup but just didn t bother. Peanut Butter Bar - Get it (if you re a fan of peanut butter and/or not allergic to peanuts). It was the highlight of the meal. The different layers all offer something to the dessert, especially the crumbly cookie bottom layer which has a KitKat wafer taste and texture mixed in there. We didn t order any cocktails but just opted for a bottle of wine. My husband had one in mind and the somm recommended an alternative that was available and tasty! No complaints with the somm. The interior and ambience are fine. They still had up cute Christmas decor with large ornaments dangling from the ceiling, but I m sure once those come down, it ll feel a bit more moody but simple. I wouldn t keep this in my bookmarks to try again. To me, it seems way too pricey for what you get in terms of quality and taste.

We had a delightful dining experience at Stillwells at the hotel Swexan in Dallas. To start, we enjoyed the refreshing Cesar salad, flavorful deviled eggs, and savory beef dumplings. For dinner, we indulged in the perfectly cooked 12 ounce fillet mignon accompanied by crispy onion rings. The baked mac & cheese was rich and creamy, while the loaded baked potato was a satisfying side dish. The roasted chicken was tender and full of flavor. Overall, we highly recommend Stillwells for its delicious food and pleasant atmosphere.

Worst service Ive ever had in a high end steak house. Went for apps and drinks. Food took over an hour to come out. 2nd round of drinks never appeared. We asked for the bill to be fixed and it supposedly was, but they still double charged me for the wrong amount and the right amount so now I have to dispute a charge on my card. Avoid this place.

Had a reservation for 9.15 pm New Year s Eve. Arrive a few minutes early, no hostesses to greet you. Wait about 5 minutes and GM comes up to say welcome. No smile or friendly greeting. Tells us we will be seat on time. Ok great. I then ask is there a seat for my wife to sit while we wait due to her health. Says no but he will bring one. That never happened. Eventually 2 hostesses arrive. No smiles just grumpy and they kind of argue about getting us a table, he gets told there are no tables for 2 only for 4 and that is supposedly reserved for people coming at 9.30 They consult a little more. She then concedes to him and we get seated. Our server Cooper was great. Food was at best mediocre. I order the picanha. Did not look like one. Get told it s a top sirloin. I ask about this and get told that how they do a picanha. It was not edible. Our server take it away. A manager come by and apologized and did ask if he can get me something else l decline so he says he will take care of it. Offers me a drink which I accept very nice. I also told him I m not looking for a free meal. He tells me again he will take care of the steak. Bill arrives and they did charge me for half the steak. Really just added insult to injury. Pretty disgusting. Will never eat there again and would not recommend this restaurant to anyone. For prices you pay for food we could have gone to Outback and had a better meal.

My steak was served stone cold (yet was also overcooked - so it sat back there for a long time), my friend never got the drink he ordered, the sides were okay , and the waiter reviewed in detail their seafood specials after being told no one would eat seafood and we had a seafood allergy at the table. Honestly I attribute this to growing pains of a new restaurant that they can fix. The atmosphere was beautiful and the cocktails were delicious. If they can improve the food quality this could be an amazing place.

Service was absolutely horrible. I have never been treated like this at any restaurant in my life. The horrible treatment and demeanor of the staff ruined the dinner to the point where we got up and left the table. Our waiter disregarded us and we had to ask for him multiple times. We sat at our table for 30 minutes before we were served with even water when we had a reservation. Extremely disappointed. Would rate a 0 if I could.

Food and atmosphere are what you should expect from a high-end steak house. The location is best accessed from the north and west via Harry Hines Blvd and Moody Street - NOT McKinnon Street. Parking: THE HOTEL HAS COMPLIMENTARY VALET PARKING. Do not park on your own in some downtown parking garage but finding the hotel and the valet was challenging. Wheelchair accessibility: For a push wheelchair, maybe. For a power wheelchair, definitely not.

This evening I had the pleasure of dining at Stillwells Restaurant with my friend, Mimi, who was visiting from out of town. The evening was spectacular! Derek Frey runs an amazing restaurant in the new Swexan Hotel. We had cocktails and wine as openers, then we both had wine for our starters. Mimi then had the petite seafood tower and enjoyed every moment of it. I had the spectacular filet, from the cattle that are raised on the ranch in Texas, with particular attention to breeding and color. When I shifted from my starter to my main, I needed to shift from a white wine to a red. The sommelier was so knowledgeable. He started out with a light red, which is the way to start and it was too light. We then changed to the next red and it was absolutely perfect. We concluded with a delicious peanut bar and a scrumptious slice of carrot cake. Our server was incredibly knowledgeable about the menu and the wines and every aspect of our dining experience. I am so looking forward to my next visit to Stillwells Restaurant. Bridget H.

We attended Stillwells last Saturday to celebrate a friends birthday before a show. The ambiance of the Lounge is very vibrant, but not crushingly loud. The tiny chairs opposite the bench seating were comically small until we had them replaced with proper chairs. For a table of four, those tiny chairs should not have even been at the table when we were seated. The decor is modern and appealing. The service was impeccable, attentive, and extremely courteous. We had a round of cocktails, wine with dinner, and split a couple of entrees and salads. The bread that appears on the table to start was full of flavor as was the salted butter. We ordered the Caesar salad and the dressing was extremely anchovy heavy to the point of the salad having a fishy taste. The croutons and parmesan crisps were great, but the dressing was not. On to the mains, we had the crab cake, which was substantial and very tasty. I ordered the HWD Dry Aged 12oz Strip, medium rare. It came with a steak sauce that was quite delicious. The cook was correct, however, the sear was a bit lacking. It was almost as if the pan/broiler was not hot enough. My particular cut also had a pretty significant tendon running through it which caused me to discard maybe an ounce or two. We chose the mushrooms and sauteed spinach for our sides. Both were quite good, well prepared, and well seasoned. The staff clearing the table was VERY eager, to the point of clearing out nearly everything while one person was still eating. I get pulling plates away from diners who are finished eating, but leaving the sides for the person still dining should have happened. It made that person feel pretty uncomfortable. We passed on dessert but I ordered an espresso and that was excellent. Ultimately, we are glad we came. For the premium paid for the experience, I believe there are alternate steakhouse options that will deliver a more consistent and complete product at a better price point.

was in for a culinary treat. The ambiance set the tone for a delightful evening, and the menu did not disappoint. For starters, the Deviled Eggs and Beef Dumplings were nothing short of spectacular. Each bite was a harmonious blend of flavors and textures, making them an absolute must-try. The Deviled Eggs were creamy with just the right hint of spice, while the Beef Dumplings were succulent and packed with rich, meaty goodness. The Caesar salad was a refreshing interlude to the meal. It was brimming with flavor, with crisp lettuce, a tangy dressing, and the perfect amount of parmesan. Every forkful left me craving more, a testament to its impeccable preparation. As for the entrees, the 8oz Filet was cooked to perfection. Tender, juicy, and seasoned just right, it melted in my mouth with every bite. The Roasted Chicken, on the other hand, was a symphony of flavors. Moist on the inside with a perfectly crispy skin, it was a dish Id happily order again. But the pièce de résistance of the evening had to be the chocolate donuts. Oh, those donuts! Sinfully rich and decadent, they were a chocolate lovers dream come true. Each bite was a burst of chocolatey goodness, so indulgent that I almost wished I hadnt discovered them. Theyre the kind of treat youll reminisce about long after the meal. Stillwells Steakhouse and Bar offers a dining experience that is second to none. From the starters to the dessert, every dish is crafted carefully, ensuring a memorable meal for all. Highly recommended for anyone looking for a top-notch dining experience.

We were excited to celebrate my son s 16 th birthday and upon arrival we were told we weren t able to enter the restaurant because the birthday boy was wearing sweatpants. They asked if we had a pair of trousers in our vehicle or if we lived close by to go get them and come back which seemed ludicrous. I ve been to lots of much nicer places than this and if they were so strict about their dress code I think they should enfisize it a bit more. It felt a bit racist and most of all I will never forget the way they made my family feel that day nothing like we ve ever experienced before. I hope they are able to correct and treat everyone with a little more respect and dignity .It was disgusting to say the lleast.

Went there for a friends birthday, table of 6 nothing overwhelming. Drinks were awful, why would someone put mustard in an old fashioned? Steaks were over cooked, didn t bring out the correct sides, put wrong food on front of people. If I m paying 80 dollars for a steak please don t have the audacity to send it out with A1 steak sauce on the plate. Ordered donuts for dessert since our waiter raved about them, they tasted like stale fryer oil and my dashed hopes for a good meal. I could find a better steak on the line of a waffle house. 10/10 on ambiance though.

Great little addition to Dallas. While the food was on par, the service was spectacular. Hats off to the entire team for collaborating successfully and pulling off a wonderful dining experience. Our waiter Ed Lasri was a true professional and watching him at his craft was a real treat. The wine list a bit tilted toward over the pond so you may want to call in advance and put a plan in place before your arrival. Truly an exceptional experience!

We went on opening night & I give them a lot of credit for delivering a really fantastic dinner! We tried a lot of different things, but the standouts were the HWD Wagyu Filet with Horseradish Cream, the 22oz Cowboy Ribeye with Chiles Torreados & surprisingly, the Bolognese was as good as any Italian restaurant in Dallas! Cocktails were tasty, I had the Attache with Cognac & the Rio Grande is a fun play on a Moscow Mule. Service was really hospitable throughout the meal & if they keep this up, this will be one of the hardest seats to get in the city! The wine list was also fantastic, not just all the usual suspects, clearly their Master Sommelier, Barbara Werley has been busy!
